I'm preparing for IOM trip next month. I don't have luggage rack and my understanding it's out of stock. (Would be nice if anyone wants to sell me one).
Has anyone tried attaching a couple of waterproof vaccum sacs to the rear of the 2 roll bars behind the passenger and drivers head? Will it work?

No. They will work but... They will be lying directly on the paint and with vibration and grime will wear it down is spots. Cover with a clear coat plastic stick on sheet first. Maybe that will do.
What's your mileage? Who cares. Is it practical? See #1. What happens when it rains? You get wet.

That looks like a good solution. But I wonder if it fits well on the curvey boot of the 3wheeler? Anyone tried it please?

If 2-up, an old trick is to use a parcel service to send a bag of clothes to and from the hotel  PS I have the MorganPark Germany rack on mine…
