Speaking as a Norfolk born old boy - if you require good fuel economy from the car leave it LHD - she's likely to be a little more circumspect with the loud pedal.
On the other hand if you want to give it spirited airings go for the RHD conversion..

I'm lucky to see 27mpg out of Mrs Polo GTI's 1.8Turbo she only uses the RHD pedal...
Now how do I go about converting it to LHD read wink

She does tend to notice when it's coming up to a service and will pass some giveaway comment like the car doesn't seem quite as quick today - love her to bits but she does drive very quickly on her own.

Driving a RH car in Spain was never a problem other than entering and leaving paid car parks and toll booths.. Maybe the frog eye could sneak under the barriers!

Isn't it time you guys started driving on the right side of the road. I know you have developed the habit of driving on the wrong side but in general terms very few people tilt at each other on horseback these days.

If you intend to do any touring abroad keep it LHD,
otherwise convert to RHD.
