I've fitted my new wheels and 205 tyres to the back of my morgan, and it appears that the drivers side tyre sticks out about 5mm more than the passenger side.
Is there any lateral adjustment in the rear axle - it would only require a 2-3mm shift to the left to equalise it.
Would a panhard rod do it? Or do I need to fix first and then use a panhard to keep it in place?

Entirely different car I know with factory 5 link rear suspension, but my back axle was centralised to chassis using the panhard rod (the fifth link) when it was found to be out around 6mm. Problem was this put the wheel to body alignment noticeably out so a compromise was found.

Well, the axle locates on a single peg on each leaf spring. Movement is really limited. Have you checked the wing width from the inner wing panel to the lip of the arch? There is often a few mm difference. A Panhard rod shouldn't be tensioned, but if you fitted one, then slackened the axle U bolts, in theory you could use the Panhard rod adjuster to help centralise the axle , before tightening everything. But also measure various points side to side. From the chassis.

Mines the same- one finger fender to wheel gap one one side two the other. I asked the same question when I got mine, apparently this is normal, depends where the craftsman nails the wing on πππ

Check the mounting brackets where the rear shock is bolted to the rear brake back plate. Mine broke and then the axle can drift a little. easiest way to check is to removes the parcel shelf and try to move the shock

No rear shocks - it has those Armstrong lever things, that I believe mount onto the U bolts.
