The problem I had in the S3 was feeling too 'upright' and wanted the seat back a few inches rather than being 'lower'.

I am same height as you, I have the same problem as you, when I slide the seat to a position where I could comfortably depress the clutch pedal, my chest would be too close to the steering wheel.
I now have a simple solution, slide the seat right back, then seat yourself a few inches forward(slide yourself forward), so that my leg still be able to depress the clutch pedal, place a small cushion under your lower back, and you have a very comfortable driving position
Not to mention, your lowering the centre of gravity as well
