Will chip in here as I have given thought to this and tried bleeding the brakes and adjusting tire pressures to improve handling, acceleration and stopping.

The brakes are fine. The car is extremely light and doesn't have very much tire surface on the road. Too easy to burn out and too easy to lock up.

Simple physics. Mass and inertia at play.
