Couple of questions I'd really appreciate some help with:
1. Does anyone know the exact thermostat for a 1996 Plus 8 have a link to it in a parts store/online. Struggling to find exact one...
2. Where does the in-dash temperature get its reading from? thermostat, on radiator temperature sensor on rad or elsewhere?

I've got the correct thermostat on the shelf. I send them out with all my +8 aluminium radiators.
The sender for the gauge is electric, and mounted on the front of the inlet manifold next to the thermostat housing.
The otter switch in the bottom of the radiator is to control the electric fan
