Thanks Steve, found it.
Having done some research it seems that on the zetec there are two (or sometimes three) temperature sensors, with one for the dash gauge (on the thermostat housing?) and one (in the block?) for the ECU that controls the fan.
As my problem is a near-constantly running fan when the engine is fully warmed up, while the gauge shows about 105C, I'm wondering if this could all be caused by a faulty sensor?
Anyone have any ideas about this?

Can you remove the sensor and see how the resistance changes in hot to boiling water?
