I am a little surprised about the height of your 4/4, Vassilis. I have exactly these four-seater leaf springs we're talking about. If you zoom in on my avatar, you can still see the car in high resolution. I have to check again if the garage has added extra blocks to get the car lower, but I'm pretty sure that this is not the case.
Others may know better but I can not imagine that the weight of the additional spare wheel has so much influence on the height. Your car sits perfectly! I think the weight of the spare makes a difference.

I believe Mulfab do a centre-ing block which also lowers the rear end a little. A recent post referred to this but on older cars I think the petrol tank may need to be moved as well.
Other experts should be along soon with proper advice.

Try GoMog there is something in there on that and on the 4/4 Sports lowering blocks.

As I understand it, one should avoid the lowering blocks if possible in order not to worsen the handling.

I removed the lowering blocks on mine.
That reduced grounding a lot.
The spare wheel can not cause that much difference compared to co-pilot and a big suitcase on the rack which is standard on holiday trips. My car can handle the weight in the rear.

Mulfab advertise a centralising block of 3/8 inch, which will move axle back by 15mm and also a lowering block at 19mm, which will also lower it by 19mm. I think the first step Vassilis would be to have a look at your axle to see if there are any existing blocks between the top leaf of the spring and the axle. Whilst there, count how many leaves are on your current springs to determine whether a change from standard has already been made.

In the case my car also should have this lowering blocks, is it easy to remove them just for a test of looks and drivability?
