I have just fitted an oil pressure gauge to my 2015 car.
All seems to work well enough and the hot running pressure seems much as I would expect. However, after a good long run (50 odd miles) the hot idle pressure drops to early 20s psi. It returns to the less worrying pressure instantly when I touch the throttle.

Any ideas what the hot idle pressure parameters should be?

Hot oil (about 90c+) pressure is about 25 psi at idle. Pretty normal πŸ‘.

Mine goes down to around 25psi at tick over but only recently fitted the gauge so not driven in hot weather.
Thing is how accurate are the gauges? I just treat mine as a guide to what's going on and wouldn't be worried at 20psi hot tick over.
What oil are you using?

Ignorance may be bliss but the engine is very expensive........ You can always drive until the "engine has melted" light comes on 😁.

If you car is a GDI then that's just fine. I also fitted an oil pressure guage (2014 GDI) and get 25psi at tickover when hot -- which is plenty. The great thing about the pressure guage is that it tells you when the oil is hot enough to rev the engine. Don't rev it over 2krpm when it's cold and the needle is stuck right up at the top end.

+1, and oil weight, and oil brand, and oil type, and miles on engine, how the engine was broken in, and how warm is β€œwarm”?

Lots of variables but from what you are saying I would not worry.

In ten years of production and over 2000 M3Ws produced how many melted engines have we experienced? I'm in the ignorance is bliss camp and I did blow an engine (not due to oil pressure)!!!!!!
