I used brake fluid and the pistons went in fine. Tight, but smoothly. My current dilemma is how to hold the boot on the caliper ridge so I can install the retainer rings...

Something does not look right there? I would expect the dust seal to look more like a bellows, with one lip in the cylinder bore, retained by the piston itself? The other lip then sits in the piston groove.

Oh, so you've got the later, metric calipers? I've never worked on those but I assume you get the seal over the lip and start the ring and hold it there, then work it round the piston. I can see it's going to be a fiddle though.

The boots are exact replacements of what came out, There's a lip on the ID, which fits the groove in the piston, and the OD slips over the ridge on the caliper body.

Sorry, my bad. Just looked at a photo of my own and the bellows fits over an outer facing lip at the top of the bore. And then the groove in the piston. But no retainer is used.

Can't immediately see how to attach a photo to show you?

Bingo, found this on the electrical interweb. It described the two different forms of the caliper: Girling 19P and PB.

And yes, they were also used on Mk1 Lotus Cortinas.

But no, I'm afraid it doesn't actually help you solve your retainer issue. Even if it does explain the apparent difference I remarked on..

Success. I levered the pistons out a bit and slid the boots down so they engaged with the ridge on the caliper. I was then able to fiddle the retainers on...

Well done! Normally, these things (that go by many names) are put on from the other end before you slide the pistons in. Makes the job less tricky.
Nonetheless, the only important element is that it succeeds.

Pending a test drive..you saved yourself 100s of pounds and found a new trade.
