A friend from Yorkshire also suggested that I should try a bit of mature cheddar cheese with Christmas Cake, I scoffed at first, but the two are surprisingly complementary - especially with a glass of red wine, port or whisky.

And whilst we are at it, my father back home in Bradford often used to make a desert out of yorkshire puds by sprinkling them with sugar. And they never were eaten with the main meal - they were always used as a way of taking the edge off your appetite before laying into the roast beef.
In the old days cooking on a yorkshire range, the beef roasted on a rack half way up the oven and the yorkshire pud mix was in a tray below that positioned to catch all the drips that came off the beef. Made the pud really tasty.
