I have exactly that setup (factory "easy up" hood in everflex) on my 2005 4/4, and I find that the Tenax fastener is actually very easy both to fasten and to undo, just requiring a pull using finger and thumb - I do not have or need the "special tool". However it is the first thing I undo (both sides) before lowering the hood - at this stage it is not under a lot of tension - and the last thing I do up when erecting the hood, again to avoid excess tension. As above, be careful not to attempt to lower the hood without undoing both the Tenax fasteners.

Being hand made and fitted, of course your hood may differ from mine with the fasteners not in exactly the same place, and if they are under any lateral tension they would be hard to undo. Have you asked a specialist - either a dealer or a trimmer? I suspect someone like Shaun at Allon-Whites could easily sort this for you.
