What do I put on it,if anything, to protect it from wet and birdy poo?

The only two of which I've had experience ( and on an MG rather than a Morgan) are by Renovo (

and Autoglym (
www.autoglym.co.uk )
The Autoglym stuff is marketed as 'Mohair Hood Cleaner' but they also do what they describe sas a 'kit' for cleaning Cabriolet Fabric Hoods.
I haven't tried the kit so can't comment.
Otherwise, I found both the Autoglym and the Renovo to be good
