I know that our legendary neoprene king used some u-channel to tidy up the edge.
As well as Allon-White, Steve Simmonds also covers the binnacle in leather - he did mine.
I have also just spotted that the stainless steel binnacle made by
Matthias Kaufelt no longer seems to carry the qualification that they can only be used with their dashes, I meant to look into one of these myself. In the latest Miscellany I noted that it looks as if Uncle Melvyn also carries them.
