I don't know how many miles and which direction you want to make them on your road to Caramulo (I guess this is your Portuguese final destination), but if you're open to suggestions, in Santander, you shouldn't miss "Santillana del Mar", "Comillas", "San Vicente de la Barquera"; "Potes"; "Liérganes", etc.
If you have the time and want to go further, drive along the coast to the West, to Asturias. So many amazing villages and roads to visit there too! Let me know if you want some advice!
Heading South to Leon, if you plan to pass there, remember that Leon has the most beautiful cathedral stained glass windows in Spain. And in Jiménez de Jamuz, down in a cave - cellar, you have "El Capricho" that was recognized to have the best meat in Europe... If you're not vegan, you should stop there and try their meats, and don't miss the "cecina vieja". Take your handkerchief for the cry after the lunch.
Unless you have your roadmap clearly pre-established, let me know and I can suggest you specific spots and places to pass-by adequate for such a nice Morgan drive.
