When you say that

are you saying that points 1, 2 and 3 of the "Break-in Procedure for V-Twin Motors" is already done by MMC while we have our 3 wheelers delivered?
Yes, the engine will have been initially run in and the first service and oil change will be due after 1,000 miles / 1,500km or 3 months. Then every 3,000 miles / 4,500 km or annually.
Bear in mind the S&S details above are generic and cover uses such as custom bikes with lower oil capacity, no fan cooling and possibly carbs instead of electric fuel injection.
Just treat it lightly for the first few 100 KM and slowly increase the revs/load from then on.
