When i had 1000cc (Sports) motorbikes, I genuinely found them better to ride safely than the 500cc bike I started with.
Thats true. But a bike is different - you need to keep a bigger safety bubble round a bike and often the only way to do that is by using the power and overtaking into clear space. Your ability to overtake isnt remotely the same in a car, any car, the power isnt half as useable and the frustration is greater. The result is dodgier overtakes. With a greater power to weight ratio, I have never skdded on my bike except with a flat rear tyre. In the car I have spun and certainly have fishtailed. I dont understand the engineering reasons of why it should be so, but I am convinced the balance of a bike is better.
I know very well from practical experience that I am much more vulnerable if I do come off my bike, but I am convinced that I am much less likely in the first place to have an accident on my bike.
