To get the pink colour you need Prague Powder (or Prague Salt - the same thing). Be careful not to use more than the recommended amount in the brine.

You can find recipes for preparing the brine on the net. I find 4 or 5 days in the brine is enough and I would be careful with the amount of spices you use on your first attempt.

My grandfather (Hughes - now there is a good Welsh name) was also at Gallipoli with the Royal Marines. He was never very complimentary about Churchill, who he blamed for the disaster.
