A lot depends on your budget, but I can certainly recommend a '70's 4/4 - very easy to maintain and tinker with, and the lovely Ford 1600 Crossflow engine.
Initially I misread that as a Ford Cosworth engine! Should have gone to Specsavers I suppose.
Regarding the question posed , as above your budget will dictate some of your choices, but make a few notes about each model and see which has the most important features for YOU.
Trads
4/4 Nimble , agile , lightweight , some models a little down on power but hugely enjoyable as you can drive it closer to the max a lot more of the time.
+4 A bit more power , older TR engined cars a bit nose heavy , modern Duratec engined ones are really well liked , nice mixture of power and handling
Roadster , modern V6 engines , plenty of power, but beware of low sumps on older models , newest 3.7 litre cars can be quite a handful without the coil sprung rear suspension
+8 Lovely aural sounds from a very old-tech motor giving abundance of torque and sufficient power. Carb models can be thirsty, handling a little tricky ON THE LIMIT when motoring fast.

I live it to others to fill in the data here but these are generally more expensive cars to maintain and purchase, and the for some the early cars' looks can be challenging
