Could it be that the the regulator change that sorted the the fuel gauge has now also"sorted the temperature gauge and in fact that is the correct reading.
Waterless coolant can make some systems run hotter if they were marginal in the first place.
What is the gauge reading and have you checked it by putting the sensor in just boiled water. Maybe the gauge is correct.
Could be you have a cooling problem rather than a gauge problem.
