Clutch cables are adjustable to take care for production/assembly tolerances and for clutch disc wear but not for stretch. If it is really stretched you should replace it as it will break sooner than later. I think the person who did the gearbox conversion knows best where to source the correct cable (maybe it is also from a Ford Sierra ?).
If I was you, I would remove the existing cable and take it to a Ford parts dealer to check it they have something in stock. Otherwise I would try a gearbox/clutch workshop where they have the facilities to do a taylor made cable with the correct fittings and cable length (according your sample).
