The only thing we've found with Paradors is that the quality of the food is very variable. Whilst most of them are reasonable, or in some cases excellent, one or two that we have stopped in have had some of the worst food we've had in Spain.
Other than that I agree with Bill that the old premises tend to be better and the Paradours still remain our first choice of accommodation there.
