If the clutches were for CVH-engined cars with a cable clutch then I can't imagine that the spring rates were too high, are you sure that the replacements weren't intended for hydraulic operation? That could explain the increase in pedal pressure required, possibly?
Otherwise, have a close look at the bell crank, if the arms have moved round on the shaft there will be a great deal less leverage available. The original bell cranks made by MMC were not exactly robustly constructed, and a common mod when repairing or restoring them is to add a deal of extra weld and strengthening.
