So we know what you don't like, what do you want so we can focus on the bits that matter ?
Volve C70 is a more relaxed experience. I would only go for the newer shaped models based on the Ford chassis.
VW EOS is a nice drive and well made. Low running costs and solid.
Second-hand Boxster is a good purchase. Lots around as a result of the recent model shape change and excellent quality. Check what options are on it as these vary a lot.
Nissan 350/370 Softtop is a fun car with great handling and easily overlooked. Just make certain the previous owner was not a drifting champion.
Any good ?
Everyone loves a Morgan. Even me, unless it's broken again.

Db7, refined drive, not too bad to get in/ out off, and lovely build quality

Thanks for all the ideas. Always difficult to say what you want when you are not sure what there is but having reflected, I have a shortlist of Golf Cabrio, EOS & BMW 1 series. Others, whilst desirable, exciting and interesting just won't quite fit the limited 'brief'. Cheers, Dave

I believe a Beetle is a fine idea. They are not too low to the ground and still have a vintage style that the Golf cannot match.

Good luck with your search Dave. I have no other suggestions - the Audi A3 / A4 has already been suggested. An alternative to them (assuming you are not looking for new) is the Saab 9-3 convertible.

Another thought, just remembering a conversation a couple of weeks ago at my local filling station - chap the other side of the pump had a small Merc cabrio (not an SLK), but something like a 220. Seem pretty good value if you buy one a few years old... Might be worth a look.
