Milky coffee spilt onto a carpet mat! Fortunately not in the Morgan. Mat has had carpet shampoo liberally applied, scrubbed and dried, but there is still a lingering aroma. Doe anyone one have a clever idea? I am starting to think that a new set of mats might be the only solution.

Suggest either spraying or rubbing in with White vinegar and when it has dried the vinegar smells disappears as does the other smell. I have used on boat and car mats and thus far always had a result but....

Hire a Rug Doctor and give the mats etc a through clean with the upholstery head.
Then a liberal spray with Febreeze or any simular deodoriser.
I would avoid Vinegars as then can carry a strong odour for quite a while.

Get some Vanish stain remover for carpets (in pink bottles, I think Tesco sell it). It is a chemical cleaner that should lift out the milk/coffee from the carpet fibres. Spray it on the carpet and then rub vigorously with a clean cloths, changing clothes as each one gets dirty. Test first to ensure it does not lighten the carpet colour. 2 or 3 applications should do it.

one thing a trimmer I know swears by is brake cleaner - It removes odours as well and is basically dry cleaning fluid (ish) leaves no markes and gets rid of grease too

Milky coffee spilt onto a carpet mat! So easily removed. Wash with a carpet cleaner then seal in a knotted plastic bag with a measure of cat litter in an paper bag. Leave whole bag in airing cupboard for at least 24 hours.

I agree with Adrian, Vanish carpet spray. It takes red wine spill marks out of a cream carpet... So it should do the job!

Just be patient.....smells tend to fad and disappear in time. On one occasion my then two year old daughter vomited in my wife's brand new VW Golf. The smell was horrendous and when I say horrendous I mean HORRENDOUS! It took two hours in the dark and freezing temperatures to clean the car with towelling and mild detergent. However, the vomit smell lingered for at least six months after....but it did go, though when we sold it some of the plastics were never quite the same. So, I'd suggest bear with it and don't use anything which might leave a lasting impression.
