Perhaps I missed it, but I could not find a time interval listed in the owner’s manual for brake fluid change. Did I miss it?

No, but two years is a good rule to thumb for vehicles using DOT 3 or 4 fluid, and is the OEM recommendation from brands like BMW and Porsche.

My Mustang had its first MOT & 3rd service. I asked about brake fluid & antifreeze change & was told technicians test them & change if needed. I hope they did that.

I had to change the brake fluid after 2 years. It may also depend on driving style and garage temperatures but 2 years was correct for my M3W.

My Mustang had its first MOT & 3rd service. I asked about brake fluid & antifreeze change & was told technicians test them & change if needed. I hope they did that. These days modern antifreeze lasts a lot longer than two years. There are devices that can test the brake fluid in the reservoir but not in the calpers where water vapour can creep through the flexi hoses. That seems more to do with reducing service costs rather than good practice.

Condensate in the lines can lead to corroded slave cylinders.

Never trust just testing brake fluid in reservoir.
For the price of the fluid change it at least every two years, if not more frequently if an enthusiastic user of the brakes!
Mainly the reason when fitting externally braided hoses being amazed by the difference in brake feel (no - it's because the fluid has been changed)

+1 I tend to go for taking each front caliper off, pads out, pump the pistons out a fair bit (not too far!) Then hold the brake pedal down to seal the top end of the system. Last step is to open each bleed screw in turn on the caliper and press the pistons back to force the old fluid out the bleed screw. Sounds complicated but is really easy on the M3W, though not quite as easy as on a race bike.
