Search ebay for “quick release swivel ball joints”... or google “bearing boys” plenty available in different sizes for just a fistful of £s then you can make up your own stays exactly like, but at a fraction of the cost, of commercial ones.

I used item QM5 from bearingboys.co.uk in conjunction with M5 hex connectors from ScrewFix and 6mm dia aluminium alloy rods from Amazon subsequently threaded M5 at each end.
A ball housing with threaded rod, also from bearingboys, provides support with rotation facility at the base of the rod.
Can’t remember exactly how much, but in the order of £20 and a few pleasant hours at the workbench.

Does anyone know why Wolf's bonnet stays have become unavailable. My guess would be that Cain's been too busy to make a batch up? As Morganeer Chris has noted, it's not hard to make some. You can get 6mm ally rod from Screwfix for £2.99 a metre.

Had those on previous Mogs before Wolf existed, worked fine Do these one's lock? I have been waiting for Wolf's bonnet stays for some time. Looking for an alternative that locks so wind can't blow the stay off. Had a couple of close shaves at car shows in the past.
