Stuart, try to press this part inwards on this side and the back side (or it is some way above this part, anyway it must happen on both sides at the same time, and you will feel where it is movable).

Then try to tear the plug upwards and habe a look at the contacts and use some clean contact spray.
If you want to remove the gas pedal, you need a second person because it is screwed through the splashboard, with nuts in the engine compartment.
If the accelerator is indeed the culprit, let me know. I still have the part number somewhere, and it has to be exact. I've got photos somewhere. You have to saw off the long, lower part of the pedal that matches the Ford Fiesta or Focus.
That way you can save a lot of money. Because even with Ford the pedal costs more than 250€ when new in my memory, not to imagine Morgan prices. At the end you have to drill two holes in the shortened pedal arm and screw the roller of the Morgan back on.
But I am sceptical if it is the pedal. By the way, I also had a lot of grease at that place.
As I said before, first look at all the contacts. Throttle body, MAF sensor, throttle pedal (where you currently are) I had changed my throttle pedal. The mistake had fooled me, because it was gone for a while. But in the end, the accelerator was not the culprit.
If the fault is getting worse and more permanent you or your garage have a much better chance to find it. BTW, if the fault is not the coil pack it is not too much lost money. I felt that the engine was a bit stronger with the new coil pack after 65.000km.
