They use steel sheet piling to hold back the banks of the canals near us.

Knock them in, dredge out with a JCB and back fill.

Gabons....they would give a good solid wall to support the new bank.
Koffer dam to install then backfill.
What inlet and outlet do you have?
Could you lower the water level to get the work done?
I’d put trout in if it was my lake. Try to get some of the hybrid trout for a difference to brown/rainbow.

There's no natural feed in/out. The pond has Carp in it and some are quite large. A few resident ducks too.

The width at the point I'd like to reclaim is about 15m. Cost is a big factor for me. Spending thousands isn't an option. I've been told that one way to do it is drive a series of posts across and then secure a net to them and start back filling with clay.

I guess that would work as a would clay in sand bags to build a dam & then in fill

If some of the carp are quite big, flogging them off could contribute to any cost.
