Stainless is vunerable to stress crack corrosion from chlorides such as road salt. Not a good choice in my opinion.

Tensile strength is generally reduced with stainless bolts which is the main concern when used to replace high tensile bolts. Commonly available A2 (304) stainless has barely half the ultimate tensile strength of grade 8 or 8.8 high tensile steel and yields with even less.

Stainless on stainless may cause galling. If it does the only way to remove them is by cutting them off

As above don’t use stainless. It would be safer with new high strength bolts rather than standard bolts. You could also use a thread locking method. Even Loctite liquid would add a decent extra security.
