Thank for the comments. The hinges were not that tricky. As long as you mark them out first, take your time and cut true to your lines they will be fine. Centre punch before drilling and drill with a small drill first ( say 1mm) to avoid drift in the tough stainless. Even getting the finish was easy. Literally just a few seconds rubbing with 3000 grit paper and they start looking nice.

Tim - Very nearly went down the clip route. Take a look at these. I had a few that I no longer use and came very close to adapting them.
