Ordering the car from new is an indulgence but a great (and unique) experience.
Specifying exactly what you want and then being able to visit the factory and watch your own car being built is just wonderful. You may get a similar experience from Jaguar if you have £1.4 million to lavish on a new E-type!
As for which model to choose - test drive them all as they all have different characters.
I am one of many who love the 4/4 but know equally many others whose preferences lie on other models.
Whatever you opt for I am sure you will be delighted with it.
