Probably, unless it upsets the ECU if the fan motor is disconnected.
My Gilbern had no sensor, so I invested in a conical hole cutter, and made a hole in the radiator header tank big enough to take a late spec MGB fan sensor. This worked well, but it was a risky job making a 3/4 hole in the rad!!!!!
