When I worked on the island sometimes stayed at the Oaklands Lodge Hotel in Trinity, nice and quiet out in the country with a secluded car park at the rear and a good restaurant.
This is a nice place too but slightly busier at St Aubin car parking wherever you can find it. The seafood platter to share is spectacular.
http://www.oldcourthousejersey.com/The Waters Edge was another favorite but they have turned that into S/C chalets now it would seem, you could step out the bar door onto the start line of the Bouley Bay hillclimb, great stuff.
