I have the John Taylor cover but if the engine is still warm from a run I just tuck the bonnet section underneath at the windscreen, so it becomes a 'cockpit only' cover. If worried about windy conditions you could do the same while still having the fully extended cover available to protect the engine if it rains. I found that it was still easiest to put the cover on first by using the headlamp loops and then, once it was fully secured, to release the headlamp loops and tuck the bonnet extension underneath against the windscreen.
