Normally when you re-lace a wheel you stick with OEM hob. Finding a place to do them stateside should not be difficult. The shop may need to check around to find a rim that is outer laced.
The biggest difference about MC tires is the sidewall is much much stronger than a car tire so that flex is impressive.
The down side of using a MC tires is you will never wear the chicken nubbings
