I have seen factory fitted clocks that have been positioned such that the steering wheel blocks the view! Suggest, you sit in the seat and try various positions before drilling. It’ll look better if centres of all instruments are lined up horizontally. One point to be careful of is to ensure that your chosen location will not foul the timber framework to which the dash is attached i.e. don’t go to the extreme right!
Useful tip: when using a hole saw, run it in reverse for a few turns to gently scratch into the veneer before cutting, to avoid splitting and chipping. I also found that the hole was slightly tight and opened it out using an abrasive flap wheel on the drill.
