We tend to do big mileages on the weekend, and try to avoid motorways as they're efficient but deadly dull. If we do stop for a comfort break it's a village cafe, pub or NT place. Not many chargers in these locations!
So current thinking is we'll do most journeys in the MG, Morgan or Harley and leave the EV for her work stuff when she's being paid to wait for the milk float to charge. Can't say I'm too disappointed.......
I suspect your good lady will quite enjoy the advantages of an EV, and you might be surprised to see just how many charging opportunities there off the m/way network. I think there are apps available in terms op providing data such as location numbers and type. A relative did the NC500 in his Tesla without issue, he beamed up all the charging points and planned everything before he left home.
EV ownership can be a lot more convenient than most folk might think... Even the occasional selective Luddite can be seduced... (-:
