Robbie around 1990 I had a similar trouble on a Corvette, but a lot older (1967) than your car: after replacing all the components of the braking system, I resolved the problem with replacing the flexible pipes that have been corrupted and partially obstructed. So the pressure took some delay to release and permit to the brakes to come back at the waiting position. I never knew the origin of this trouble, perhaps topping with an incompatible brake fluid ? I don't know.
