Other than the sound, is there much performance difference between the G-56 exhaust and the stock exhaust that has had the baffles removed? I am thinking of purchasing a new exhaust for the car but if it isn’t going to perform a lot better than the stock with removed baffles, I will just throw that money at something else

Lots of posts and thoughts that dance around this issue. In my experience, a baffleectomy is a baffelectomy. Aside from that, its an aesthetic choice.

For me there was no difference. I did some 0-60 times using a Dragy timer with standard exhausts without the front baffle and then G56 exhausts and I wasn't able to improve the time.
This was with standard cams and a free flow air filter.
Having said that, they have to flow better than the standard exhausts even without the front baffle and maybe there would be a difference if you compared them on a car without the cats and or stage 2 cams to take advantage of this.

By all accounts the difference is in the quality of the sound, although I have not heard the two side by side. As I recall the G-56 sound is described as mellower and deeper.
As the stock exhausts were already punishing my ears I went with G-56 and am very happy. I think in general they are quieter, But they are not cheap!

I am use to sound. I have a chopper with short straight exhaust and have ridden Harleys for years so sound doesn't bother me. Frankly I feel that the stock exhaust is a little quiet for the big v twin sitting up front. I am really looking for comparison of performance. The engine is really restricted and I was hoping to find out if the baffle removal performed as well as the G-56. I am thinking about removing the cats next.

Oh and you are right about the price. Over $2000 USD shipped. There will have to be a huge improvement to justify the cost

I had the Morgan Aero Racing stage 1 exhausts and am currently running the stock exhausts with front bafflectomy and slightly enlarged preexisting holes in the rear baffle. No difference in performance that I can tell. I prefer the exhaust note of the modified stock exhausts.

I have not touched the cats and probably won’t.

I have no experience of removing the baffles, but the nest ever mod I did from standard to a MMC stage 1 (sports exhaust and air filter) and it totally transformed the car.

I totally agree. Going from stock air filter and exhausts to the Morgan Aero Racing Stage 1 high flow air filter and exhausts transformed the performance of the XWedge for me as well. Others with Garage 56 Stage 1 report the same thing. Definitely a must do mod. I just didn’t like the exhaust note of my Morgan Aero Racing Stage 1 exhausts and decided to modify the stock exhausts as others here have done to see if the exhaust note was more to my liking. I like the modified stock exhaust note more.

The front baffle of the stock exhaust is a significant impediment to the escape of exhaust gases. It’s removal significantly improves the flow of escaping exhaust gases and with the high flow air filter seems to function as well as the Morgan Aero Racing Stage 1 exhausts. This statement is not based on dynamometry testing but subjective open road driving. I’ve had considerable driving time with both.

Sportster, do you have the G56 Stage 2 cams and ECU with the baffleectomy pipes?
