it is difficult to always ask for help without ever helping, and i 'm very sorry for that but maybe with the experience I will one day be able to help.

I changed the battery for a Marelli lithium ion and put it at the passenger's feet.
The 3W starts very well and runs perfectly at slow speed but as soon as I accelerate the engine safety button goes off.
Has anyone ever had this problem?

Yes, I had the same problem when I installed a Marelli Lithium in the same place as the original battery.

I replaced the cut-off switch but it made no difference so I ended up cable tying the switch shut as it was cutting out at random.

As it's a mechanical inertia switch it can't be anything to do with the electrical side of the battery and I think the lighter (or no) weight of the battery may allow the battery tray to vibrate and cause the wires to the inertia switch to wobble and trigger the switch. I intended to try rerouting and cable tying the wires ot the switch but, to be honest, forgot about it.

I looked at the safety switch, it is a steel ball that is released to hit a hinged plate in the middle and held by a spring. When the ball hits the pad it makes an upside down V and the ignition is off.
Indeed this circuit breaker has nothing to do with a security of the electrical system.
As you removed the safety contactor I think you connected by a bridge with the two wires coming out of the safety contactor?
What is this inertia contactor used for? to stop the engine in the event of an accident, shock, or a strong vibration following the breakage of the camshaft belt?

If you are in a wreck you will have a hot engine and pipes that could well be still spewing fuel onto those hose surfaces by the electric fuel pump. Boom! Big fire hazard.

The inertia switch cuts power to the fuel pump. All the rest of the electrics and ignition remain live.

I cable tied the switch shut.

In other words, the inertia switch is designed to cut power to the fuel pump in the event of an accident.

I have been using a small garden tractor gel battery for a few years.
I paid 50 €, it is maintenance free, and works perfectly well
