I had the same idea to make the sensors in the oil-line, but changed my mind, because I had bad experience with leaking T-pieces in tubes.
I am very pleased with the solution I found and get really good values.
BTW for me oil-pressure is far more important to know than oil temperature.
Oil is - besides air - the main cooling for these engines so for me knowing the real engine temperature is also more interesting.
I just posted my solution, maybe interesting for you too.

I have been talking to combat.net who are still offering bikes using the engine. I asked about parts and they only supply to their own customers. More interestingly I was told that the company that bought it are re-engineering it for their own applications and are re-designing some parts and keeping the original part number. Just a heads up you might not get quite what you want - though I guess it will probably fit …
