Underneath the Morgan, the bolts protrude beyond the nuts.
Would it be a sacrilege to cut these bolts off flush with the nuts?

I do all mine, but leave one thread clear of the nut.

You need a bit clear to thread it on easily. Also is you cut them run a nut below the cut so you can recut the thread.

Do you use an angle grinder—which generates heat—or a handsaw?

I use a grinder with a cutting disk not a grinding disk. Remember to wear goggles.

Thirded 🙂 .... when I did my resto I replaced everything non safety-related with stainless (with nyloc nuts) ... just brakes and suspension mountings with tensile steel. TBH you could probably swap those as well, but it's an old racing thing that you don't use stainless in suspension, steering or brakes and I just stick with it ... an 8.8 bolt is the same as an old 'S' grade as near as makes no odds for road use. I use a tiny smear of copper grease on assembly as stainless can gall if provoked .... beats struggling with rusty nuts and bolts somewhere down the line.
