I am a bit sceptical about ceramic coating claims for heat reduction, I think they are a bit optimistic.
My thoughts are towards reduced underbonnet temperatures as the V8 creates a LOT of heat...I have OE cast iron manifolds. Not a lot of room for shielding either.
More head scratching needed I think.
I did get rid of some very light surface rust on the manifolds by scrubbing them with a Scotchpad and Pepsi....they are a decent cast iron grey now ....the Pepsi contains phosphoric acid.
