I think a hidden switch would be all that is necessary to stop a thief. I have had three cars stolen, one of them twice! None of them were stolen, sold, or stripped, they were just taken for a joy ride and run out of fuel or broken down. It is quite annoying to come out from wherever you may have been, whether dining out or sleeping, to find your favorite vehicle gone.

I was siting on a beach with friends and saw my vehicle driving off and there was nothing I could do to stop it. Another vehicle was idling in front of the Post Office when a guy hopped into it with me about 15ft from the vehicle (1ton utility truck). He could not figure out the locking brake mechanism and kept stalling it. Rather than go to the driver side and have to confront the cretin or stNd in front of the vehicle I went up to the passenger window and tapped on the glass with the side of my .45ColtAutomatic; he got the message and left quickly.

Having your vehicle stolen is not a good thing and if anyone is worried just put a switch under the dash that disables the starter.
