As Stephen suggests the location of the oil cooler fan and the air flow created might be helping in the heating of the oil in certain conditions especially as you say it was running all the time. A running oil temperature of 200 - 210 when the engine is up to proper running temperature seems a bit on the low side, should be around 220 - 230.
