What are you using to get the depth with the cutter?
Hole saws are a relatively easy item to get hold of.
What are you using as an extension?

I have not done the baffle-ectomy but I was an electrician for many years and used drill motors with very long extension, sometimes two at a time made by Milwaukee for the large boring bits (2-3-4"dia bits) I suspect these or something like them would work with a carbide hole saw.
Check with an electrical construction supply.

1. Cordless drill
2. 18" long 3/8" drive extension with a socket on the end to drive the hole cutter
3. 38mm hole cutter.

I'm running S&S 'Stealth" Muscle open filter. I fitted a rain sock but to be honest I don't think it needs it! Runs perfectly in the wet.

No problem.
I put pvc tape around the extension and socket to stop it coming apart.
One hole saw did both sides but use slow speed on the drill and oil as heat will quickly blunt it.
