The rubber seal on the rear edge of our Roadster hood has separated from the canvas hood.
Is there a particular glue I should use to re-seal please?

Any neoprene based glue like Bostik will work.

The trick with gluing is very thin coats, leaving each to become very tacky before applying the next. Three coats on each surface minimum

Correct toluene, but ensure good ventilation. Toluene is heavier than air and sinks to the ground it then creeps away in a thin sheet. The flash point is I think 5c so avoid open flames sparks etc.
