When we went, we based out tour on the Scenic Car Tours route. As there were only going to be two cars, they weren't able to offer the trip bespoke to us. They did however get us a good discount on the ferries.
We started in the North so not quite what you are looking for but may be helpful.

No itinery but a few photos here of a trip taken in 2017. 4/4 in Ireland4/4 in Ireland (2)Delightful so it was. My suggestion would be to study some maps of the area and seek out the sort of things that are of most interest to yourself. Make it a voyage of discovery.

Don't miss Blarney Castle. The Blarney Stone, is a tourist thing which just goes to prove that kissing it actually works  The view from the top of the tower makes it worth the effort. For me the main attraction was the gardens. Allow at least 3 or 4 hours for the visit. The Ring of Kerry was a bit of a disappointment, but then it was a rainy day 🌧. Perhaps better done in 2 days with some side trips. Galway was great, especially the seafood 😋 Don't miss a guided tour of Dublin Castle. Very interesting and informative from a historical perspective. The crypt of Christ Church Cathedral is worth a visit too.

Just remembered - we were advised that it is best to drive the Ring of Kerry the same way round as all the coaches go - otherwise you are in for a very frustrating day.
Also, don't miss the Kerry Cliffs.
