As it happens, I designed a banana boat as a 1st year project in my Ship Science degree. I shamelessly plagiarized large parts of the design of the Geestbay II. (Fun fact: Geestbay II was guilty of rescuing Richard Branson when Virgin Atlantic Challenger sank in his failed blue riband attempt)
IIRC the main constraint on the number of passengers embarked was the maximum complement allowed without there being a ship's doctor.
